Today The Mexican style Taco has become the main item for most household weekly menu planning “Taco Tuesday”.

Other main dishes include Meatloaf, Spaghetti, Lasagna, Casseroles, and with today’s slow cookers it is always easy for one-pot wonders.

Taco is so versatile, one can almost put anything you like in them as far as meat goes and some without meat,

Simple ingredients can be used for My Mexican style Tacos

Refried Beans are a staple must-have as well as Mexican Rice

Being Hispanic my Mom would often make her own flour tortillas, Oh how I miss them, and we put whatever was available and roll them and Eat! we seldom use corn tortillas, when my Mom would make Enchiladas or Tostadas, she would use Corn for them.
As a kid, we called what is now known as Burrito’s that’s what we call Tacos.
Some of my favorite fillings where;

Seasoned Ground beef
Chicken Mexican Cheese
Chorizo with eggs
Beans and Mexican Cheese
Beans and Chorizo

Basically, they are all prepared the same way it’s all now about the way the fillings are prepared, seasoned just right and not over seasoned with oregano and cumin.
Today’s burritos are just like our Tacos we grew up eating but they added lettuce, tomatoes, sour cream, Mexican rice. peppers, salsa, cheddar cheese.

If can make your own flour tortillas all the better, flour tortillas are very simple and fast to prepare, just a few ingredients, but it’s all in the method. See recipe HERE,

So go ahead make your own Tacos each week and change the fillings so you’re having the same old same Taco.
Here is a fine recipe, again it is all in the filling preparations.

Home Made Mexican Flour Tortillas

Homemade Flour Tortillas

Ingredients:

4 cups all-purpose flour

1 teaspoon salt

2 teaspoons baking powder

3 tablespoons shortening or lard

1.5 cups hot water

Directions:

In a large bowl, combine dry ingredients. With a sharp knife, cut shortening or lard into small pieces. Add pieces to dry ingredients and thoroughly combine with your fingers

until a uniform consistency is achieved. Add hot water and lightly work into a dough.

Place dough a lightly floured surface and continue kneading until a smooth ball is formed. Divide dough into 16 equal-sized portions and allow to rest under a damp (not wet)

cloth for 10-15 minutes.Place each small dough portion onto a lightly floured surface. With a floured rolling pin,  roll the dough into a thin, round shape.

Tip: Turn the dough 90 degrees every so often to create a uniform round shape.

Preheat a large dry skillet (preferably cast iron) over medium-high heat. Add one rolled out dough circle and heat until golden brown, then flip and cook until golden brown on another side.

Repeat with remaining dough pieces. Place each finished tortilla in tortilla warmer or wrap in aluminum foil to keep warm. Serve immediately with your favorite fillings.

You May use soft shells, or make your own tortillas, You can also buy tortillas

Ingredients

  • 1 pound Ground beef
  • 1 each Chopped onion
  • Salt to taste
  • 1 each Clove garlic (optional)
  • 1 package Taco shells
  • 1 cup Green chili or taco sauce

Instructions

  1. Saute' the beef and onion until brown. Salt to taste. Add garlic if
  2. desired. Place a heaping tablespoon of meat mixture in each shell and
  3. stuff with lettuce, tomato and cheese. Serve with the chili or taco sauce and top with sour cream or guacamole for an added treat.

Notes

Fresh Tomato Salsa the best time to make this recipe is at the height of summer when there are plenty of fresh tomatoes available. This recipe tastes even better the following day after the flavors have a chance to blend. This Recipe does not contain peppers, if you like a little heat I suggest using diced fresh jalapenos/seeded and fine diced.

Ingredients: 4 medium ripe tomatoes, cored and seeded 2 – 3 cloves garlic, peeled Juice from 1 fresh lime (about ¼ cup) 1 – 2 tablespoons fresh cilantro, stems removed and finely chopped salt and pepper, to taste
