Pork Chops Braised In Hard Cider

Pork Chops, Braised in hard cider.

Hard Cider is so available these days,and chefs like myself
are creating recipes and methods to enhance our dishes, as
you know apple sauce has always been a compliment to pork,
especially roast pork loin, our older generation would be
insulted if they did not get apple sauce with their pork
roast. They simple say you DO NOT serve pork without apple
sauce. Here is a simple recipe that truly brings out a
unique apple flavor of simple pork chops, when buying pork
chops I like thin cut and bone-in , thick chops are good
but I like to marinade them to ensure they get tender, pork
is not like buying steak cuts, in steak you look for the
fat content called marbling, this fat adds flavor and
tenderness.

Pork Chops Braised in Hard Cider; Makes Four servings

2 Tablespoons of olive oil
4 med onions sliced very thin
3 medium red bell peppers seeded,sliced thin.
1 bay leaf
4 pork chops
1/4 tsp. salt
1/4 tsp. course black pepper
1 cup of hard cider.

Directions; Heat oil in a large skillet over medium heat,
add onions, cook sirring often until golden 4 minutes
brown, add peppers bay leaf cook until peppers are soft.

Season the pork chops with salt and pepper. add chops to
pan cook and turn occassionally, until browned on both
sides, add the cider and simmer gently until chops are
cooked, about 8 minutes, remove bay leaf, serve topping
with onions and peppers, and pan juices.

as in any recipe adjust as you like your the cook, be
creative.
